Chilled Quinoa Salad

Cool, fresh, and easy!

Ingredients:

  • 1 cup uncooked quinoa
  • 2 cups water
  • pinch of salt
  • 1 large mango, diced
  • 2 large tomatoes, diced
  • 3 green onions, sliced
  • 1/2 cup chopped cilantro
  • 2 medium avocados, diced
  • 1/4 cup fresh lime juice
  • 1 tbsp olive oil
  • 1/2 tsp cumin
  • Salt & pepper to taste

Directions:

1) Rinse quinoa under cold water
2) Boil quinoa for 5 minutes over medium heat with a punch of salt. Turn heat to low and simmer for 15 minutes or so until water is absorbed.
3)Remove quinoa from heat, fluff with a fork, and allow to cool.
4) In a large bowl combine quinoa, mango, tomatoes, green onions, cilantro, and avocados.
5) In a small bowl combine lime juice, olive oil, cumin, salt & pepper.
6) Pour the dressing over the quinoa salad and gently stir until well combined. Serve to friends and family at room temperature or chilled!
